What we liked
- + 1000 grit side quickly brings back a dull shear edge
- + Fine 6000 grit side refines the edge for cleaner cuts
- + Water stone needs no oil, so cleanup is simple
Trade-offs
- - Check whether a base or angle guide is included before buying
- - Soft water stones wear unevenly without regular flattening
